做法(fǎ ):春笋切(qiē )成片后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖(gài )上锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀(yún )稍(shāo )收汁时(shí )盖上(shàng )锅盖焖。
