做法:春笋切成片(piàn )后(hòu )加少许盐捞(lāo )出后(hòu )用清水浸泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右(yòu )。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住(zhù )春笋,盖上锅(guō )盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时盖上(shàng )锅(guō )盖(gài )焖。
