做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
