做(zuò )法:春(chūn )笋切(qiē )成片后加少许盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖(gài )上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候(hòu )加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
