做法(fǎ ):春笋切(qiē )成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟(zhōng )左(zuǒ )右。再加(jiā )入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
