做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛(niú )肉(ròu )片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后转中火。煮到水快熬(áo )干(gàn )的时候加入盐(yán ),翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖。
