做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再(zài )加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火(huǒ )。煮到水快熬干的(de )时(shí )候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖(gài )焖。
