做法:春笋切成片后加少许盐捞(lāo )出后用清(qīng )水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加(jiā )入少量清水半(bàn )掩住春笋,盖上锅(guō )盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖(mèn )。
