做(zuò )法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝(háo )油(yóu )翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到(dào )水快熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
