做法:春笋切(qiē )成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加入少量(liàng )清(qīng )水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大(dà )火煮开后转中火。煮到水快熬干(gàn )的时(shí )候加入(rù )盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖。
