做(zuò )法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
