做法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入(rù )生姜、春(chūn )笋、牛(niú )肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加(jiā )入(rù )少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
