做法:春笋切成片后加少许(xǔ )盐捞出后用清(qīng )水浸泡,生姜(jiāng )切(qiē )片,葱(cōng )切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少(shǎo )量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干(gàn )的时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
