做法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右(yòu )。再(zài )加(jiā )入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火(huǒ )。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
