做法:春(chūn )笋切成片后(hòu )加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清(qīng )水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
