做(zuò )法:春笋切成(chéng )片后加少许盐捞出后(hòu )用清水浸泡(pào ),生姜切片(piàn ),葱(cōng )切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入(rù )盐(yán ),翻炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖。
