做法:春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片(piàn ),葱切成(chéng )段。锅烧热,倒(dǎo )入2勺(sháo )油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水(shuǐ )快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
