做法:春笋切(qiē )成片后加少许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成(chéng )段(duàn )。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
