做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩(yǎn )住(zhù )春笋,盖(gài )上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的(de )时候加(jiā )入(rù )盐(yán ),翻炒均匀(yún )稍收汁(zhī )时盖上锅盖焖。
