做法:春(chūn )笋(sǔn )切成片后加少许(xǔ )盐(yán )捞出后(hòu )用清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量(liàng )清水半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转(zhuǎn )中火。煮到水快熬(áo )干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
