做法:春(chūn )笋切成片后加(jiā )少许盐捞出后(hòu )用清水浸泡(pào ),生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开后转中火(huǒ )。煮到水快(kuài )熬干的时(shí )候加入(rù )盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
