做法:春笋切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段(duàn )。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时(shí )候(hòu )加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
