做法:春笋(sǔn )切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再(zài )加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均(jun1 )匀稍收(shōu )汁时盖上锅盖焖。
