做(zuò )法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切(qiē )片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后转中火(huǒ )。煮到水快熬(áo )干的时(shí )候(hòu )加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
