做法(fǎ ):春笋切(qiē )成片后(hòu )加少许盐捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快(kuài )熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
