做法:洗净宰(zǎi )好鲫鱼(yú ),洗净(jìng )淮(huái )山和薏米。用(yòng )清(qīng )水把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在(zài )锅上擦(cā )一遍,放两勺油,待油六成(chéng )热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼(yú )和其他材(cái )料,武火煮沸,转中小(xiǎo )火(huǒ )煲一个半小(xiǎo )时,下盐调味即可品尝。
