做法:春笋切成片后加少许(xǔ )盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片(piàn ),葱(cōng )切(qiē )成段。锅烧热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春(chūn )笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
