做法:春笋切(qiē )成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生(shēng )姜(jiāng )、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再加(jiā )入生(shēng )抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水半掩住(zhù )春笋,盖(gài )上锅(guō )盖大火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
