做(zuò )法:春(chūn )笋切成片后加少许盐捞(lāo )出后用(yòng )清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅盖大(dà )火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的(de )时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
