做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开(kāi )后转(zhuǎn )中(zhōng )火。煮到(dào )水快熬(áo )干的时候加入盐,翻(fān )炒均匀(yún )稍收(shōu )汁(zhī )时盖上锅盖焖(mèn )。
