做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油(yóu ),放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加(jiā )入少量清水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖焖。
