做(zuò )法(fǎ ):春笋切成片后加(jiā )少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再加(jiā )入生抽(chōu )、老(lǎo )抽、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
