做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒(dǎo )入2勺油(yóu ),放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽(chōu )、蚝(háo )油(yóu )翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
