做法:春笋切成片后加少许盐捞(lāo )出(chū )后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅(guō )盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬(áo )干的(de )时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
