做法:春笋(sǔn )切成片(piàn )后加少许(xǔ )盐捞出(chū )后(hòu )用清水浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快熬(áo )干的时候加(jiā )入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖(mèn )。
