做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱(cōng )段翻(fān )炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后转中火。煮到(dào )水快熬(áo )干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
