做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段(duàn )。锅烧热,倒入2勺油,放入(rù )生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后(hòu )转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖(mèn )。
