做法:春笋(sǔn )切成片后加少(shǎo )许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒(dǎo )入(rù )2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅(guō )盖(gài )焖。
