做法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖(gài )上(shàng )锅(guō )盖大(dà )火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的(de )时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
