做法:春笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入(rù )少量(liàng )清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开后转中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅(guō )盖焖。
