做(zuò )法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清水半(bàn )掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
