做法:春笋切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡(pào ),生姜切片,葱切成(chéng )段。锅烧热(rè ),倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开(kāi )后转中火。煮到水快熬干(gàn )的时候加入盐(yán ),翻(fān )炒均匀(yún )稍收汁(zhī )时盖(gài )上锅盖焖。
