做法:春笋切成片后加少许(xǔ )盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入生(shēng )抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候加入(rù )盐(yán ),翻炒(chǎo )均匀稍收汁(zhī )时盖上锅(guō )盖焖。
