做法:春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干(gàn )的时候加入(rù )盐,翻(fān )炒均匀稍收汁(zhī )时(shí )盖上锅(guō )盖焖(mèn )。
