做法:春笋切成(chéng )片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放(fàng )入(rù )生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到(dào )水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
