做法:春(chūn )笋(sǔn )切成片后加少许(xǔ )盐捞(lāo )出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段(duàn )翻(fān )炒1分钟左(zuǒ )右(yòu )。再(zài )加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入(rù )少量清水半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
