做(zuò )法:春笋切(qiē )成片(piàn )后加少许(xǔ )盐(yán )捞出后用清水浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
