做法:春笋切成片后加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀(yún ),加入少量清水(shuǐ )半掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
