做法:春笋切(qiē )成片后加少许盐(yán )捞出后用(yòng )清水浸(jìn )泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
