做法(fǎ ):春笋切成片(piàn )后加少许(xǔ )盐捞出(chū )后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
